Beef Shorts Ribs Recipe with Cheese Grits
This recipe was supposed to be for St. Patrick’s Day. I’m just running a little behind schedule 😶🤪
I decided on this recipe and kind of made it up on the fly. I wanted an Irish recipe with a southern flair.
So hence the Guinness beef ribs and the cheese grits!


Beef ribs And cheese grits
Equipment
- Heavy bottom pot to cook grits in
- Wooden spoon
Ingredients
Ingredients for Beef Ribs
- 1-2 pks bone in beef ribs
- 1 can cream of celery
- 1 bottle Guinness beer
- garlic powder
- seasoned salt
- onion powder
- olive oil
- 1-2 carrots
- 3 cups beef broth
- flour for dusting beef ribs
- can tomato paste (small)
Ingredients for grits
- ¼ tsp salt (for grits depends on amount)
- 3 cups water
- 1½ cups cups of grits
- ½ cup milk
- 1-2 tbsp butter
- Sharp cheddar cheese
Instructions
Steps for ribs:
- Pre-heat oven to 350
- Bring beef ribs to room temperature
- Season ribs to taste
- Lightly flour
- Place olive oil in pot and bring stove to medium heat
- Place beef ribs in grease ensuring both sides are browned (only flip once)
- Set aside beef ribs
- Turn down heat on your stove top
- Sauté carrots
- Add tomato paste and stir
- Add cream of celery
- Then add beef ribs (it’s ok if they do not all fit in the bottom of the pot)
- Add the beef broth
- Add Guinness beer
- Stir together
- Place top on pot and place in the oven. Set timer for 2 hours.
Steps for grits
- Bring water to a rolling boil.
- Add salt. Stir then cover.
- Then add milk
- Stir slowly.
- Add butter
- Stir slowly.
- Then if desired add sharp cheddar cheese.
- Turn heat to lowest setting and stir occasionally.
- Serve the beef ribs over the grits!

*You’ll know the beef ribs are ready when the meat is falling off of the bone.
Serve hot!!!
